Juicy, Crisp, and Sun-Kissed: Must-Eat Summer Produce and How to Enjoy It

It’s summer – take advantage of wonderful fresh summer produce – berries, melons, stone fruits, squash, peas and herbs are all at their best right now.
When you eat with the seasons, you connect with the natural growing cycle. Support local agriculture and buy from farmers’ markets and stalls.
The Best Summer Produce
Cucumbers are great in salads, cold soups, quick pickles, dips, finger sandwiches, relishes, and salsas. They absorb flavor well, so try marinating them in soy sauce, sesame oil, vinegar, or chili.
Tomatoes are wonderfully flexible. You can enjoy them in salads, soups or simple pastas. Dice them up for a pico de gallo or bruschetta (recipe below), or marinate the smaller varieties in olive oil, vinegar, and fresh herbs. Or cook them in a summer tart or ratatouille.
Watermelon, cantaloupe (or melon), and honeydew melons are sweetest during the summertime. Cut into bite-sized pieces and enjoy chilled, but you can also enjoy them juiced, grilled, combined with herbs, or puréed into cold soups.
Berries are sweet, tart, and bursting with flavor – and they’re one of Nature’s most powerful superfoods! Add them to oatmeal, cereal, fruit salads, ice cream, frozen fruit pops, bars, and crumbles.

Recipe – Simple Tomato and Basil Bruschetta
Serves 6-8. Quick and simple to make.
- 1 ½ cups / 250g tomatoes, chopped – any variety but heirloom and cherry are always good. If you want to make sure that the bread doesn’t go soggy, remove half or all of the seeds.
- ¼ cup / 25g red onion, diced
- Large handful of fresh basil
- 4 tablespoons good quality olive oil
- 1 teaspoon vinegar (or more to taste if you prefer)
- Freshly ground salt and pepper
- 6-8 slices of bread – I prefer baguette but ciabatta or sourdough is also good
- ½ a clove of garlic
Brush the bread on both sides with half of the olive oil. Add to a hot grill, skillet or oven. Grill on each side until lightly golden.
Add the tomatoes, basil, onion, vinegar, salt and pepper, and the remaining help of the olive oil into a bowl. Toss well.
When the bread is toasted, rub the garlic onto it and top with the tomato mix.
Serve immediately and enjoy!
