Today is the perfect time to start Meatless Mondays!
Now is the perfect time to start having one dinner per week with no meat (no beef, pork or poultry). Why? It’s good for you (and the planet) – and Meatless Mondays can be really appetising, as well as fun for a change. But why should you even consider Meatless Mondays – or  meatless-any-day-of-the-week? For yourself (improved health) and for the environment (reduce your carbon footprint and conserve resources).
- Eating more fruits and vegetables can help to reduce your cancer risk, as well as reducing your likelihood of heart disease.  You are also less likely to suffer from type 2 diabetes, and reducing your meat intake can prevent long-term weight gain.
- The United Nations estimates that more greenhouse gases are emitted by the meat industry than by transportation! Several other studies agree. As global wealth increases, so does the demand for meat.  Meatless Mondays can help to slow this trend. It takes more water to raise livestock than it does to grow grains or vegetables. So you will help to conserve a precious resource.
What will I eat?
There are loads of really tasty meatless dishes.
Check out the Meatless Mondays website for ideas, or simply google or search for recipes. It will soon become second nature!
What about eating out?
In the past, I found that eating out was a problem – if restaurants actually offered a vegetarian option, it was a row of bland, dull veggies which looked unappetising and tasted worse.  But in more recent years, things have improved tremendously.
Here on this tiny tropical island, vegetable curries abound and I love them, although some restaurants still don’t quite get the concept.
In most countries, however, you can easily find meatless options on restaurant menus. Most restaurants now offer at least one vegetarian entrée or main course.  In addition, Indian, Asian and Mexican restaurants usually have many meatless options.
Here’s a quick video to watch, and then go and visit the Meatless Mondays site for some inspiration for delicious non-meat meals (if you aren’t already enjoying them!).

Meatless Mondays doesn’t really agree with the NFL. Maybe meatless Tuesdays instead.
LOL – I have to admit I don’t quite get the link between meat and NFL, but agreed, meatless any-other-one-day a week is cool!
As a confirmed carnivore who almost never ate veggies (viewed as tasteless and useless as a rule) I have been forced to give up potatoes, rice and pasta with my evening meal. Guess what substitutes – veggies like peppers, tomatoes, carrot and cucumber. Seems to be helping on the health front!!
Until my vacation at Maine Media Workshops, I had never realized just how tasty vegetarian options could be. (From a lifelong card-carrying anti-vegan lifestylist!)
I’m impressed! So, what are you going to do to have one veg meal a week now that you’re back home? You could photograph your veggie meals too……. just to prove that you really can survive without meat sometimes! 🙂
I have been eating less meat since coming to Costa Rica and eating more beans…there are so many ways to cook beans in tasty and healthy ways!
