Superfood Recipes #1 – Roasted Red Peppers With Vinaigrette
Ripe red peppers are rich in nutrients that help to lower your risk of heart disease and cancer. This is a quick and easy appetizer that takes almost no effort. You can roast the peppers over an open flame or in the oven.
Prep time: 5 minutes Total time: 30 minutes Serves 2 as an appetizer
Ingredients
- 2 large red bell peppers, stemmed and seeded
- 1 tablespoon olive oil
- 1 teaspoon balsamic vinegar
- Freshly ground salt and pepper
- Multigrain bread, sliced, or pizza base slices
Directions
- Preheat oven to 400 F / 200 C.
- Slice the tops and bottoms off the peppers, so you have a cylinder. Remove seeds. Cut lengthwise so the peppers lie flat.
- Place peppers on a lightly oiled baking sheet on the top rack of the oven. Cook until peppers begin to blacken and crack, about 10 minutes. Remove from oven and allow peppers to cool.
- Combine olive oil and vinegar in a small bowl and season to taste with salt and pepper.
- Cut peppers into bite-sized pieces. Drizzle vinaigrette over peppers. Serve on toasted bread or pizza bases – add capers, pitted olives or roasted garlic for more flavor!

Superfood Recipes #2 – Super Berry Parfait
Berries are delicious AND good for you! Loaded with antioxidants, they’ll help to keep you healthy. This snack is incredibly easy to put together in no time.
Prep time: 2 minutes Total time: 2 minutes Serves 1.
Ingredients
- 6 ounces / 170g plain, unsweetened yogurt
- 1 ounce / 30g granola cereal
- 4 ounces / 120g mixed berry compote
- 4 ounces / 120g trail mix
- 1 teaspoon ground flax
- Whole berries for decoration if you wish
Layer the ingredients in a parfait glass. Grab a spoon and enjoy!
